A Change of Seasons, a Green Thumb and Breakfast Carbonara

Breakfast Carbonara. Photo by Christine Lefavour With the onset of April comes thoughts of spring, Easter, fresh blooms and hopefully, sunshine. The record breaking heat wave we endured in Vermont this month turned out to be exactly the type of madness I needed. A green thumb has lurked in my genes through generations of farmers once and twice removed, but was reincarnated about 4 summers ago when I first planted my own garden. Using a retired garden plot on my mom’s land I turned over land and grew plants from seeds on my own time. This year I’m lucky enough to be living in an apartment with outdoor space, including a small yard and two porches, after three years of studio apartments, summer classes, five jobs, etc.! Though it’s a slow start to the season for me, I’m operating on a miniature scale compared to my first gardening adventure, but I’m quite possibly more excited than before.

The spider plant that has hung in all three of my apartments has waxed and waned and multiplied into three that hang in my home today; and what about vegetables and flowers?? I grew one potted bulb… After getting outside to rake the lawn in 80 degree weather in mid-March I was yearning for some garden work. First I purchased some all in one tomato and pepper plant starter kits (I chose beefsteak tomato and chili peppers because they seem like the most fun). The trick to these kits is getting them into the garden only when they are strong and independent. I always say, an outdoor plant is a happy plant. I also re-potted all of my house plants, giving them fresh soil with fertilizer and upgrading them to larger, sunnier spaces.

Sitting in my window since March 1st is an avocado pit halfway submerged in a cup of daily-changed water. With a split in sight I’m anxiously awaiting a leafy chute and roots! There are plenty of do-it-yourself webpages so this is my first tree-growing attempt but I am very hopeful. Finally, I’ve got basil seeds planted in a pot on my sunny windowsill. My mom always grows her own basil in a pot on her front stoop during the summer months, but it can grow year round in a sunny, warm windowsill! The basil is mostly to fulfill my cabin fever until the warmer months truly arrive. In the meantime, my stir-crazy home has driven me to the kitchen.

With my garden nostalgia mixed with a strong sense of spring time home-making, I remembered how great it was to be a kid and have breakfast for dinner. Working during nighttime leaves me home more mornings most days so I thought, why not have dinner for breakfast? My idea came from leftovers, as they naturally do. Using whole wheat thin spaghetti mixed with chopped up breakfast sausage I created a complete Breakfast Carbonara. Complete with fresh Romano cheese and green peas this is my favorite idea from the entire month of madness. For a full recipe check within the next week!

As March came to a close the madness continued with the visit of President Barack Obama to the Queen City. Two of my co-workers scored seated tickets to the 30 minute speech to be given in the UVM athletic complex. Before his appearance at the university, Obama spoke at a luncheon at the Sheraton where some of his biggest Vermont supporters were in attendance. Besides raising funds, I hope the President found time to enjoy this small state as Clinton did in 1995, walking up Church St and eating at a now small diner. Maybe times have changed, but March still proves to be one of the most unpredictable months of the year! Adios…
